1 cup finely grated carrots

1 cup sugar

1/2 teaspoon vanilla extract (I put in 1 tablespoon vanilla sugar)

120 g butter at room temperature

2 cups flour

1 egg

2/3 cup chopped walnuts (original recipe pecans)

1 cup coconut flakes

1 teaspoon dry ginger

1 teaspoon of cinnamon (it was not in the recipe, but I think it is very appropriate here)

Pinch of nutmeg

1/2 teaspoon salt

1 tsp baking powder

We do:

Beat butter with sugar and vanilla extract (or vanilla sugar). In the original recipe, it is recommended to use 160 g of oil, but this is too much for my taste, so I boldly reduced the amount of oil to 120 g.

If you want to add a caramel touch, use brown sugar (or replace half of the white with it). This carrot cookie is wonderful because it always wins with a slight change of "terms". 🙂

Add the egg to the sugar and butter, beat for another minute.

In a dry bowl, mix the flour with salt, baking powder and spices. I once tried replacing regular white flour with rice and whole grain (in a ratio of 50 to 50), and it turned out to be very tasty too! Rice flour gives baked goods such a light “crunch”, and here it turned out to be very appropriate. I say, this cookie cannot be spoiled by anything! 🙂 Once I even accidentally added one cup of flour instead of two - the cookies just took a little longer to bake and acquired a delicious “almond” crust. 🙂

Gradually add the flour mixture to the oil mixture and mix all the ingredients until smooth.
