Anyone who has had to cook rice knows very well that it takes a long time to cook, it either burns or runs away, you can’t move away from it!.. Therefore, recipes for cooking rice that do not require standing at the stove for a long time are very popular. So, quick rice (or lazy rice) according to three simple recipes:

A coworker gave me this recipe for quick rice. She said that this rice does not run away or burn and cooks quickly. If you adapt to this recipe, then the rice turns out as it should: crumbly.

The main thing in this recipe is the ratio of rice and water volumes: 1:2.

Cooking time: 24 minutes.

Ingredients for making quick rice:

  • Rice - 1 glass
  • Water - 2 glasses
  • Onion - 1-2 onions
  • Carrots - 2 medium carrots
  • 1 bouillon cube
  • Salt to taste.

How to cook quick rice for a side dish:

  1. Finely chop the onion.
  2. Grate the carrots on a coarse grater.
  3. Fry onions and carrots.
  4. Heat the water and dissolve the bouillon cube in it (if you are not using cubes, just heat the water).
  5. Add rice washed in cold water to the vegetables and add hot water with a cube.
  6. Add salt and cover with a lid.
  7. Cook for 3 minutes on high heat, 7 minutes on medium and 2 minutes on low.
  8. Turn off the heat and let stand for 12 minutes.
  9. If desired, add tomato paste, sauce or ketchup to it.

The recipe for quick rice with minced meat is my variation of the first recipe. And this is no longer a side dish, but a full-fledged, satisfying second course, which we often prepare in our family.

Ingredients for making quick rice with minced meat:

  • Rice - 1 cup 300 ml
  • Water - 3 such glasses
  • Onion - 250-300 g
  • Carrots – 150 g
  • Minced meat (beef and pork or pure beef) - 250-300 g (but more is possible)
  • Vegetable oil for frying vegetables
  • Bouillon cube - 1-2 pcs. or your favorite seasonings - to taste
  • Tomato paste, sauce or ketchup - to taste
  • Salt - to taste.

How to cook quick rice with minced meat:

  1. Peel the onion and chop finely. I have frozen chopped onions, so I won’t say how much it will be in the onions. And the bulbs are all different in size.
  2. Grate the carrots on a coarse grater. I also prepared carrots in advance.
  3. Lightly fry the onions and carrots in vegetable oil in a deep frying pan.
  4. Add minced meat and rice washed in cold water.
  5. Heat the water, dilute the bouillon cubes in it and pour in the mixture of rice, minced meat and vegetables. If you don’t use cubes, just fill them with water (or boiling water).
  6. Close the lid, wait until it boils and cook over high heat for 5 minutes. Do not open the lid!
  7. Continue cooking over medium heat for 10 minutes. At the end of this cooking period, open the lid and see if all the water has been absorbed and if the food has started to burn. If necessary, add a little more water or oil.
  8. Add tomato sauce, seasonings (if cooking without a bouillon cube), stir well and put on the lowest heat for another 5 minutes.
  9. Turn off the heat and let stand for at least 15 minutes, and maximum until the family gathers at the table :)

Thus, the entire preparation of quick rice with minced meat takes about 35 minutes.

Like any recipe, my recipe requires some adaptation. Everyone’s stoves are different, and so are their pots and pans. So my cooking times don't have to be treated as dogma. You will see for yourself how long this dish will take to prepare for you.

3. Lazy rice with chicken

“Lazy rice” with chicken is a very simple recipe for a delicious meat dish, cooked together with a side dish in the oven.

Ingredients for making lazy rice with chicken:

  • 2 onions
  • 1 can canned corn
  • 2 cups rice
  • Chicken legs or drumsticks
  • Salt, ground black pepper, paprika, spices - to taste

Making lazy rice with chicken:

  1. First you need to chop the onion, fry it in oil and put it in a roasting pan.
  2. Then drain the corn and place it on top of the onions.
  3. Next comes a layer of uncooked rice. Salt, seasonings.
  4. Pour three cups of boiling water.
  5. Season the legs (shins) with salt, pepper, grate with paprika, and place on rice.
  6. Cover the roasting pan with foil and place in an oven preheated to 180-200 degrees. Simmer until tender (about 1 hour).

How to cook lazy rice with chicken in the oven

  1. Chop the onion and fry in a frying pan.
  2. We marinate the chicken (I used both chicken drumsticks and chicken fillet, cut into pieces, it turned out equally tasty), adding sour cream, salt, and seasoning for chicken.
  3. Place fried onions in the first layer on a baking sheet.
  4. Sprinkle corn on top (drain the liquid from the jar first)
  5. Next, lay out a layer of washed dry rice.
  6. Fill with hot water
  7. The final step is to lay out the marinated chicken.
  8. Cover the baking tray with rice and chicken with foil
  9. Place in an oven preheated to 200 degrees for 40-50 minutes.

Tip: if you like your chicken crispy, remove the foil at the end of baking.

Peel the onion and cut into small cubes. Wash the carrots, peel and grate on a coarse grater.

Heat a little vegetable or olive oil in a frying pan. Add chopped onion and fry, stirring, over medium heat for five minutes. Then add the grated carrots to the onion in the pan, mix well and fry the vegetables until lightly browned, stirring occasionally, for 3-4 minutes.

Wash the chicken legs (if desired, you can use any other parts of the chicken), dry them well, sprinkle with salt, pepper and your favorite spices.

Place fried onions and carrots in a heat-resistant dish.

Add peas (if you are using frozen peas, you do not need to defrost them first).

Rinse the rice thoroughly under running water, add to the onions, carrots and peas. Salt and pepper.

Place the chicken on top of the rice and add two cups of chicken broth or water.

Cover with foil and poke holes in some places with a toothpick or fork. Place the dish with chicken, rice and vegetables in a preheated oven and bake at 170 degrees for 50-60 minutes.

Incredibly tasty, satisfying lazy rice with chicken, cooked in the oven, served hot, garnished with herbs.

3 carrots and onions

5 chicken drumsticks

How to cook lazy rice with chicken drumsticks in the oven?!

Any seasonings for marinating drumsticks (you can also use mayonnaise and ketchup, soy sauce - optional)

Rub the washed shins with spices (mayonnaise, ketchup, soy sauce). In general, everything you like. Leave to marinate for 30 minutes.

Meanwhile, fry carrots (on a coarse grater) and onions (in half rings) in vegetable oil. Wash the rice.

Place fried vegetables on the bottom of the pan, and rice on top of the vegetables. Then marinated drumsticks. And fill everything with 3 glasses of boiled water. Salt and pepper to taste. You can add water if the rice is not cooked yet. Bake until done, about 50 minutes at 180C.
